The sweetest day of the year has arrived. It’s National Cookie Day in the USA! If you’ve got a mouth with a glistening sweet tooth in it, today is your lucky day. You have an excuse to devour cookies all day. You might even find some places giving away cookies for free. 

You may be the kind of person who likes doling out sweet treats as well as eating them. Surprise a loved one with cookies today or simply bake them for yourself. There are few things more deliciously comforting than a kitchen full of sweet, baking smells. It’s the world’s best natural candle! Snickerdoodle cookies 

Looking for a cookie with a silly name to match its sweet taste? Snickerdoodle cookies are both fun to pronounce and to eat. Their cinnamony flavor and chewy goodness bring warmth to the soul.  

Ingredients 

½ cup softened butter, ½ teaspoon vanilla extract, 1-1/2 cups all-purpose flour, 1/4 teaspoon baking soda, 1/4 teaspoon cream of tartar, 1 teaspoon ground cinnamon, 1 large room temperature egg,  1 cup plus 2 tablespoons sugar; divided

Directions

Preheat your oven to 375 degrees Fahrenheit. Cream the butter and cup of sugar until light and fluffy. Then beat in the egg and vanilla. In another bowl, whisk together flour, baking soda, and cream of tartar. Make sure to gradually beat it into a creamed mixture. 

In a small bowl, mix cinnamon and the remaining sugar. Shape the dough into 1 inch balls. Roll them in cinnamon sugar and place them 2 inches apart on ungreased baking sheets. Bake the cookies until light brown, which should be about 10-12 minutes. Lastly, remove the snickerdoodles from the pans to wire racks to cool. 

Peanut butter cup cookies 

This recipe will drive peanut butter cup lovers mad with glee. It’s the perfect combination of baked good and candy goodness. 

Ingredients 

1 ¾ all purpose flour, ½ teaspoon salt, 1 teaspoon baking soda, ½ cup softened butter, ½ white sugar, ½ cup peanut butter, ½ cup packed brown sugar, 1 beaten egg, 1 teaspoon vanilla extract, 2 tablespoons milk, 40 unwrapped mini chocolate covered peanut butter cups 

Directions

Preheat the oven to 375 degrees Fahrenheit. Sift together the flour, salt, and baking soda. Then set it aside. Cream together the butter, sugar, peanut butter, and brown sugar until it’s fluffy. Beat in the egg, vanilla, and milk. Add the flour mixture and mix well. 

Shape the mixture into 40 balls and place each into an ungreased mini muffin pan. Bake them at 375 degrees Fahrenheit for about 8 minutes. Then remove the cookies from the oven and immediately press a mini peanut butter cup into each ball. Cool, carefully remove your pretties from the pan, and bon appetit! 

Iced pumpkin cookies 

Autumn may have come and gone, but that doesn’t mean we’ve gotten enough pumpkin into our systems. Many of us are probably planning on a second helping of pumpkin pie at Christmas dinner. If you’re looking to get creative with your pumpkin cravings, give this iced pumpkin cookie recipe a try. 

Ingredients 

2 ½ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 2 teaspoons ground cinnamon, ½ teaspoon ground nutmeg, ½ teaspoon ground cloves, ½ teaspoon salt, ½ cup softened butter, 1 ½ cups white sugar, 1 cup canned pumpkin puree, 1 egg, 1 teaspoon vanilla extract, 2 cups confectioners’ sugar, 3 tablespoons milk, 1 tablespoon melted butter, 1 more teaspoon vanilla extract

Directions

Preheat the oven to 350 degrees Fahrenheit. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt, then set them aside. In a medium bowl, cream together the 1/2 cup of butter & white sugar. Add the pumpkin, egg, and 1 teaspoon of vanilla to the butter mixture. Beat it until creamy. Then mix in the dry ingredients. 

Drop the mixture onto a cookie sheet by tablespoonfuls and flatten them a little. Bake your guilty pleasure for 15-20 minutes in the preheated oven. While you let the cookies cool go about making the glaze. Combine the confectioners’ sugar, milk, 1 tablespoon of melted butter, and 1 teaspoon of vanilla. Add milk as needed, to achieve a drizzling consistency. 

Once the cookies have fully cooled, drizzle on that yummy glaze with a fork. Humming while glazing has been proven to raise cookie happiness levels. Happy National Cookie Day!
