Ingredients

  • 4 large eggs
  • ½ cups plus 1 tablespoon of milk (any kind)
  • 1 tablespoon of brown sugar or coconut sugar
  • 1-2 tablespoons of pure maple syrup
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 6-7 pieces of wide pan bread
  • ⅓ cup of blueberries

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Gather the eggs, vanilla, milk, maple, cinnamon, and brown sugar.
  3. Whisk them all together.
  4. Cut the bread into about 1 to 1 ½ inches (pieces).
  5. Put the bread and blueberries into the egg mixture.
  6. Stir it up so the bread can soak up all the liquid. 
  7. Let it sit and chill for about 5 minutes.
  8. Spoon the bread and egg mixture into greased or lined muffin tins.
  9. You’ll want to gently press the mixture down to keep air bubbles or space from being made between the bread pieces.
  10. Bake for 20 minutes or until the top is golden brown.
  11. Let it cool down before you eat!

Maple Syrup Blueberry Muffins

Of all the blueberry muffins recipes, this one is meant to bring you thoughts and memories of the golden leaves of autumn. This sweet broth goes back to a hidden America. Some Native American tribes made sugar bushes where they would boil the sap with hot stones. If you can have blueberry waffles or pancakes with maple syrup, why not make a muffin out of it?

Ingredients

  • 1 ¾ cups of flour
  • 1 ½ teaspoons of baking powder
  • ¼ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 beaten egg
  • ⅔ cup of maple syrup
  • ½ cup of milk
  • 6 tablespoons of melted butter
  • 1 cup of blueberries

Instructions

  1. Preheat the oven to 400 degrees fahrenheit.
  2. Grease 12 muffin cups or line them with paper liners.
  3. Take a medium bowl.
  4. Gather the flour, baking powder and soda, and salt. 
  5. Take a small bowl.
  6. Whisk the maple syrup, melted butter, milk and eggs together.
  7. Add it to the flour mixture and stir.
  8. Fold in the berries. 
  9. Spoon into the 12 muffin cups.
  10. Bake into their golden brown for about 15-18 minutes. 

Apple Blueberry Muffins

Perhaps you want to keep things simple but you don’t want to take away a single piece of pizazz. Blueberries and apples make great companions for a sweet and hearty breakfast. Put this blueberry muffins recipe to work with a yogurt breakfast drink on the side! 

Ingredients

  • 2 ¼ cups of all purpose flour
  • ½ cup of brown sugar
  • ½ cup of granulated sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • ½ teaspoon of salt
  • 2 large eggs
  • ¾ cups of milk
  • ½ cup of butter
  • ½ teaspoon of vanilla extract
  • 1 large apple
  • 1 ½ of blueberries

Instructions

  1. Preheat your oven to 375 degrees fahrenheit.
  2. Line 12 muffin cups with liners or spray the appropriate pan with baking spray.
  3. Take a large bowl.
  4. Put the flour, sugars, cinnamon, salt and baking powder into the bowl and mix them all together. 
  5. Set the bowl aside.
  6. Take another bowl and add eggs, melted butter, milk and vanilla.
  7. Peel and grate the apple.
  8. Add the grated apple to the wet mix. 
  9. Add the mixture all at once to the flour, along with the blueberries.
  10. Stir it until it’s moistened. (The batter should be lumpy.)
  11. Divide the batter into the muffin cups.
  12. Bake in the oven for 18 to 20 minutes or until it’s golden.
  13. Let the muffins cool down for a few minutes.
